I've been a vegetarian for as long as I can remember.
Since someone asked in another part of the forum where a good place for a vegetarian breakfast was, I decided to recommend some places that I know of that cater to vegetarians. The key to living as a veggie, is that you must understand that not everybody wants to be one. so it's to be expected that not every restaurant has veggie options per say, but they will gladly oblige you when you ask for no meat.
Breakfast:
Shakabrah- They offer to switch out tofu for any scramble dish on the menu. I always used to get a dish called the Chrissy (sp?) with tofu instead of eggs. They marinate the tofu in some sort of amazing garlic type stuff. it's a must try.
PSP (Puget Sound Pizza)- I believe they have 1 or 2 veggie egg scrambles on the menu, but i always order the schuster parkway sans sausage.
Hob Nob- most any dish can be ordered without meat. though, be wary if you are in a waffle kind of mood they are 6 bucks each. I once ordered 2 waffles without knowing and i paid over 12 bucks. what a waste. : /
Quickie Too- this place is completely vegan and the owners are Rastafarian, so they don't serve anything with chemical additives, salt, or anything that involves canning or drying. *correct me if I'm wrong.
you should definitely check out their Sunday brunch. it takes a while to get the food out, but it is well worth the wait.
For Lunch/Dinner:
Antique Sandwich shop-they have a vegetarian sandwich option, and again most things can be switched out.
East and west cafe- southeast asian cuisine with many vegetarian options.
gateway to india- indian cuisine with a few veggie options and some vegan options.
marlenes market- many many many vegetarian options here. also lots of vegan, gluten free and soy free foodstuffs.
Wendy's 2-Vietnamese restaurant with kick-ass garlic tofu.
Nightlife:
Tempest- a variety of veggie nibbles and things that can be asked to be converted to veggie.
Red Hot- Yes indeedie, they offer veggie dogs. However, you might want to ask for 2 veggie dogs in your 6th ave strut because the v-dogs they offer are a little on the skinny side.
Melting Pot-easy as pie, when you're hitting them up for happy hour just stick to the cheese course or the chocolate course. *do make sure to specify what kind of broth they are using.

You pretty much covered it Roxanne, as far as the best veggie options in town! Gateway to India is totally my favorite!
I just want to add:
Rock Pasta (I think it's called just The Rock now?) - the original brick oven pizza place in town and I think the best.
It's Greek to Me - they have yummy though sometimes greasy falafel and spanikopita (sp?).
The Engine House has a very good and very messy portabello sandwich.
Metropolitan Market - has the most amazing grilled cheese I have ever had.
no talk of lele's on mlk? fantastic vietnamese / thai / indonesian food.
viendong? on 38th and yakima... also a block down yakima next to the uber sketchy pool hall is hong kong supermarket. they have every kind of animal you never thought had a vegan counterpart. totally weird place but it is fun as hell trying weird new things. hence the vegan duck i had at thanksgiving party tonight.
infinite soups on 6th and tacoma has a vegan menu and a meatless menu. tons of great soups made from scratch daily.
right around the corner is corina bakery. they make vegan pumpkin loaves / vegan orange dreamsicle cake / vegan chocolate peanut butter cake. this place rules on so many levels. cake by the slice and soup within a block from each other. every payday is spent the same. treating myself to greatness.
doyles public house on saint helens has a teriffic hummus plate that can be vegan sans the feta cheese. they also have a black bean burger that might just change your life.
also there is a new taco truck on 6th ave near its greek to me...a block or so down from that pink flower store. they have veggie burrito's like WHOA!
